The Capsicum Boksburg campus offers two training kitchens, lecture rooms, student pause areas, access to Wi-Fi facilities, and safe on-site parking. This is a tranquil little nest in the hype of the East Rand, only 5 minutes away from O.R. Tambo International Airport - your culinary home away from home. The Lion Chef

Food For Thought

Chef Theodorus Chiloane – who graduated from the Boksburg campus of Capsicum Culinary Studio in 2013 – is currently head chef of the world renowned andBeyond Ngala Tented Camp at Timbavati (Ngala is a Shangaan word for Lion), close to the Kruger National Park.


The 30-year-old was raised in a small village called Dwaleni near Plaston in the outskirts of White River. After graduating from Capsicum, he worked at leading Joburg restaurant Gemelli before heading back to Mpumalanga. Chiloane says that visitors to Ngala are looking for seasonal food of the best quality, prepared with the highest attention to detail and letting the food speak for itself.

Cuisine Wrapped in Tradition

Food For Thought

The history of Zulu cuisine goes back to an era where traditions and values were important elements to the Zulu identity.


Zulu cuisine is still very much influenced by tradition and its celebration of history and a commitment to culture. Owing to historical agricultural methods, a lot of foods in Zulu cuisine are organic and don’t require extensive processing. The separation of meat is a common cultural practice, and meat is proportioned and separated according to age and gender. Men receive portions that are referred to as “high status portions”, which would include iNhloko (the head), usually cooked in a potjie (three-legged pot), and iSibindi (liver). The liver symbolises human bravery, much like the heart in many other cultures, and is served medium rare with salt on the side.

Cape Malay cuisine is, as its name implies, a fusion of a traditional South African essence (specifically from the Cape on the West Coast, now known as Cape Town) and Malaysian, or Eastern influences.


It's flavours are well-known to locals, and remain a major part of the South African culture. Due to its unique quality, Cape Malay cooking has become an important part of the South African identity, as well as of the tourist experience.
