Today the 13thof May 2021, we celebrate the luscious Middle Eastern spread, made from chickpeas, Hummus. The first evidence of Hummus can be traced back to Cairo during the 13thCentury. Apart from being delicious, Hummus has a number of impressive health benefits, some of which include, helping fight inflammation, improving blood sugar, improved digestive health and better heart health. Hummus allows for a world of creativity, from creating different flavors of Hummus to creating a variety of dishes using Hummus, we can all agree that Hummus is a beautiful creation. 400g Chickpeas, drained and skinned.
30g Extra Virgin Olive Oil
30g Tahini paste
1 Lemon, juice and lemon
1 Garlic clove
20g Coriander (with stems)
½ Red Chili, deseeded
Pinch of Salt, to taste
Pinch Pepper, to taste
Preparation
Place all the ingredients: chickpeas, tahini, lemon juice and zest, extra virgin olive oil, garlic, chilli and salt & pepper into a food processor/blender and blend to a smooth, creamy paste.
Taste, adjust seasoning if necessary.
Pour into a bowl, drizzle with a little bit of olive oil and garnish with coriander and chickpeas.
If to be used later, please in the fridge to chill covered with cling film and serve later.
